Roast Beef

Roasting beef should not be intimidating, nor does it need to be saved only for special occasions.  In fact, you can have roast beef in just over 1 hour.



Ingredients
2.5 lbs. beef - I used a "beef round rump roast"
1 tsp. crushed red pepper flakes
2 tsp. granulated garlic (garlic powder)
2 tsp. onion powder
2 tsp. dried basil
2 tsp. dried "Italian Seasoning"
1 TBSP. olive oil
1 c. water

Directions
1. Preheat oven to 450F.  Here's a photo of my roast, which should be slightly more interesting than a photo of my oven being set to 450F.


2. Mix together the dried herbs and spices. For some reason, I completely forgot to add salt and black pepper to the mix.


3. Put the beef into a roasting pan, coat it with olive oil and the herb/spice mixture.


4. Roast it on the middle rack for 20 minutes, then reduce the heat to 250F.


5. Roast for another 20 minutes.

6. Add the 1 cup of water to the roasting pan, and cook another 30 minutes, or until the internal temperature reaches about 130F.

7. Remove the roast to a carving board and allow to rest for 10-15 minutes before slicing.  Save the pan juices for Italian beef sandwiches.


Oops, I wasn't paying attention and sliced with the grain.
