Donggeurang Ddeng (동그랑땡) Korean Meatball


Donggeurang Ddeng (동그랑땡) are Korean meatballs or meat fritters.

Ingredients
1 lb. ground beef (I actually used 12 oz. ground beef and 4 oz. ground pork)
1/2 block tofu, 7 oz. (I used medium-firm)
1/2 large carrot, finely chopped (2.6 oz)
1/2 medium onion, finely chopped (4.6 oz.)
2 serrano chiles, finely chopped (optional)
1 tsp. minced garlic
1 TBSP. soy sauce
2 eggs
1/2 c. all purpose flour
oil for frying


Directions
1. Squeeze excess liquid from the tofu and chop the vegetables finely.


2. Mix it all up!

3. Form into balls about the size of a ping pong ball.


4. Flatten each ball into a small patty and coat in flour.

5. Beat the eggs in a bowl.  Heat a frying pan over medium heat and add a bit of oil.  Dip each patty in the egg and fry for 2 minutes.


6. Flip and cook for another 2 minutes.

7. Transfer to a plate lined with a paper towel to drain excess grease.
